Default Coffee Methodology

A rating system built the way the world's most trusted culinary inspections are — rigorous, anonymous, and adapted from the ground up for the realities of specialty coffee.

Our Philosophy

Coffee deserves the same scrutiny as haute cuisine.

For over a century, restaurant inspection has had a gold standard: anonymous visits, consistent criteria, and a small, meaningful vocabulary — one, two, or three stars — that travelers trust instantly. Specialty coffee has grown into a craft every bit as technical and expressive as fine dining, yet it has never had an equivalent. Default Coffee exists to close that gap.

We are not affiliated with the Michelin Guide, Starbucks Corporation, or any coffee brand. Our star system borrows only the idea of a disciplined, tiered award — the criteria beneath it are built entirely around how coffee is actually grown, roasted, and served.

The Criteria

The Five Pillars

Every shop in the Guide is scored 1–5 on each pillar below. Star tiers are then determined by both the average score and the weakest individual pillar — a shop cannot coast on one strength alone.

Bean Provenance & Sourcing

We look for traceability all the way to the farm or cooperative, the depth and durability of direct-trade relationships, fair and transparent pricing, and respect for seasonality rather than a static year-round menu. A shop that can name its farmers — and pay them well — scores highest here.

Roast Mastery

This pillar measures precision of roast profile, discipline around roast-date freshness, and — most importantly — whether the roast expresses the character of the origin rather than masking it. Consistency batch to batch counts as much as any single exceptional bag.

Brewing Craft

We evaluate barista technique and training, dial-in consistency across a shift, and extraction precision across espresso, filter, and any specialty preparations on the menu. A shop that pours a flawless espresso but a mediocre filter cannot score at the top of this pillar.

Flavor Harmony & Creativity

Balance in the cup, thoughtfulness in milk and alternative-milk preparations, and a distinctive, coherent palate across the menu. Signature drinks are judged not on novelty alone but on whether they still taste unmistakably like well-made coffee.

Experience & Consistency

Hospitality, atmosphere, and craft in the space itself — but above all, whether the quality holds up on a Tuesday morning the same way it does on a reviewer's visit. This is our equivalent of Michelin's repeat-visit standard, and it is the pillar most three-star shops are ultimately separated by.

The Award

The Three Tiers

One Star

Exceptional coffee — worth a visit. An average pillar score of 3.0 or higher, with no pillar scoring below 2.5. The shop excels within its category: precise sourcing, a well-tuned roast, and a bar that delivers a genuinely great cup, visit after visit.

Two Stars

Outstanding craft — worth a detour. An average pillar score of 4.0 or higher, with no pillar scoring below 3.5. Mastery across sourcing, roasting, and brewing, with a point of view distinctive enough to plan a trip around.

Three Stars

Extraordinary — worth a special journey. An average pillar score of 4.6 or higher, with no pillar scoring below 4.0. A definitive global reference where every pillar reaches its highest expression at once.

Process

How a Rating Is Reached

Nomination & Scouting

Shops enter our review pipeline through public nomination, editorial scouting, or recognition on respected industry lists — but a nomination alone guarantees nothing.

Anonymous Visits

Reviewers visit unannounced, pay full price, and return on a separate occasion before any rating is finalized — consistency is part of the test.

Panel Cupping

A separate cupping panel blind-tastes the shop's current lots against our five pillars, independent of the in-person visit, to isolate the coffee itself from the room.

Scoring & Star Assignment

Visit notes and cupping scores are combined into the five-pillar scorecard published on every shop's page, and the star tier follows directly from the thresholds above.

Annual Re-Review

Every rated shop is revisited each edition. Stars can be gained, held, or lost — the Guide reflects the current state of a shop, not its history.

Independence

No shop can pay for a star.

Inclusion in Default Coffee is entirely editorial. We accept no payment, advertising, or commission from any coffee shop, roaster, or brand in exchange for a rating or placement, and our reviewers' identities and visits remain confidential. Shops may request a re-review if they believe conditions have meaningfully changed since their last visit; the request itself has no bearing on the outcome.
