Why we started Default Coffee, who evaluates each address, and what we promise every reader.

Our Story

Specialty coffee earned its own guide.

Default Coffee started from a simple observation: the people obsessing over bean origin, roast curves, and extraction ratios were applying restaurant-grade rigor to a category with no restaurant-grade guide to show for it. Wine has its critics. Fine dining has its stars. Coffee — despite a global community of growers, roasters, and baristas working at an extraordinary level — has mostly had word of mouth.

This edition rates coffee shops across every inhabited continent, from long-established roasting houses to counters that opened in the last two years. We add new addresses and re-review existing ones on an annual cycle, and we retire ratings when quality slips — a star in Default Coffee reflects a shop's current form, not its reputation.

Our Panel

Who does the rating.

Ratings are produced by a global panel that includes licensed Q-graders, former barista-competition judges, working roasters, and travel writers with deep regional knowledge. Panelists rotate regions periodically and disclose any personal or financial connection to a shop under review, recusing themselves where one exists. No panelist's identity is published, for the same reason restaurant inspectors traditionally stay anonymous — it's the only way to be served the same cup as everyone else.

We are not affiliated with, endorsed by, sponsored by, or connected in any way to the Michelin Guide, Michelin Tyre plc, Starbucks Corporation, or any other brand featured within these pages. Any resemblance in format to other inspection guides is intentional homage, not affiliation. All ratings, scores, and editorial commentary represent our panel's independent opinion at the time of review and are provided for informational purposes.

Coffee shops cannot purchase inclusion, a higher rating, or preferential placement anywhere in the Guide. See our full methodology for how ratings are produced.
